Fresh cherries are brought from various cooperatives and single farmers who have their charry fields in the south-east of the province of BARI, and after being sorted and stemmed the cherries are submerged in ethyl alcohol to be stocked in barrels.
This method allows us to stop the aging process of the fruits in a completely organic natural way, so they can then be stoned and used for the productions of chocolates and various confections.
